Potato and Bean Curry

Serves 6. Ready in 20 minutes

Ingredients:

  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tsp ground cumin
  • 2 tsp curry powder
  • 3 cups stock
  • 6 medium potatoes, cut in bite-size pieces
  • 1 can of mixed beans
  • 1 cup green beans (fresh or tinned)
  • 1 small handful of spring onions, thinly sliced
  • Fresh ground black pepper to taste

 

Method:

  1. Boil potatoes until tender.
  2. In a large saucepan heat the onion, garlic, spices and then add the potatoes to the beans, spring onions and stock.
  3. Cook 10 minutes or until the beans are tender.
