Potato and Bean Curry
Serves 6. Ready in 20 minutes
Ingredients:
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 tsp ground cumin
- 2 tsp curry powder
- 3 cups stock
- 6 medium potatoes, cut in bite-size pieces
- 1 can of mixed beans
- 1 cup green beans (fresh or tinned)
- 1 small handful of spring onions, thinly sliced
- Fresh ground black pepper to taste
Method:
- Boil potatoes until tender.
- In a large saucepan heat the onion, garlic, spices and then add the potatoes to the beans, spring onions and stock.
- Cook 10 minutes or until the beans are tender.
