Low-fat chunky vegetable soup |

Serves 6Ingredients:- 2 medium onions, chopped
- 4 large carrots, sliced
- 2 celery stalks, thinly sliced
- 4 courgettes, sliced
- 2 tbsp olive oil
- 2 cloves garlic
- 2 small potatoes, cubed
- 1 small cauliflower, broken into florets
- 1 cup shredded cabbage
- 1 cup peas
- 1 cup skinned and chopped tomatoes
- 6 cups beef or chicken stock (home-made or cubes)
- Salt and pepper to taste
- Chopped fresh herbs

Method:- Sauté the onion, carrots, celery and courgettes in olive oil. When soft and slightly browned, add the garlic and potato. Stir-fry for three minutes.
- Add the rest of the ingredients and simmer gently for 25-30 minutes.
- Add chopped fresh herbs just before serving.
