Low-fat chunky vegetable soup

Serves 6

Ingredients:
  • 2 medium onions, chopped
  • 4 large carrots, sliced
  • 2 celery stalks, thinly sliced
  • 4 courgettes, sliced
  • 2 tbsp olive oil
  • 2 cloves garlic
  • 2 small potatoes, cubed
  • 1 small cauliflower, broken into florets
  • 1 cup shredded cabbage
  • 1 cup peas
  • 1 cup skinned and chopped tomatoes
  • 6 cups beef or chicken stock (home-made or cubes)
  • Salt and pepper to taste
  • Chopped fresh herbs


Method:
  1. Sauté the onion, carrots, celery and courgettes in olive oil. When soft and slightly browned, add the garlic and potato. Stir-fry for three minutes.
  2. Add the rest of the ingredients and simmer gently for 25-30 minutes.
  3. Add chopped fresh herbs just before serving.
