Sweet chilli chicken stir-fry

Serves 4

Ingredients:
  • 250g dried egg noodles
  • 2 cups chicken stock
  • 1 tbsp oil
  • 4 chicken fillets, cut into strips
  • 1 onion, sliced
  • 1 clove of garlic, sliced
  • 3 carrots, julienne
  • 1 green pepper, sliced
  • 3 tbsp sweet chilli sauce
  • 2 tbsp soy sauce


Method:
  1. Cook noodles in chicken stock for about six minutes or as per packing directions.
  2. Drain and set aside.
  3. Heat oil in a wok and stir-fry chicken for three to four minutes, until cooked. Remove with a slotted spoon and set aside.
  4. Add onions to the wok and cook for one minute. Add carrots and green pepper and cook for about three minutes.
  5. Add chicken and noodles to the wok and toss well to combine.
  6. Add sweet chilli sauce and soy sauce and stir through.
  7. Serve immediately.
