Beef and rice noodle stir-fry

Serves 4

Ingredients:

  • 400g beef (or your favourite meat), cut into 1cm wide strips
  • 4 tsp sugar
  • 4 tbsp soy sauce
  • 2 tbsp sunflower oil
  • 2 small red peppers, cut into chunks
  • 2 cloves garlic, thinly sliced
  • 2 red chillies, thinly sliced
  • 4 large carrots, thinly sliced
  • 170g baby corn
  • 300g dried thin noodles
  • 2 tbsp ginger, peeled and finely chopped (optional)


Method:
  1. Place the beef, sugar and soy sauce in a bowl and set aside to marinade for 15 minutes.
  2. Place the rice noodles in a large bowl and cover them with boiling water. Allow to soak for 15 minutes until they are soft and then drain.
  3. Heat the oil in a wok or frying pan, until it’s very hot. Add the beef and stir-fry over a very high heat for three to four minutes.
  4. Add the peppers, garlic, ginger, carrots, baby corn and chilli.
  5. Cook for a further two minutes or until the vegetables are cooked, but still crunchy.
  6. Add any leftover marinade from the beef or a little water, if the wok/frying pan becomes dry. Add salt and pepper to taste.
  7. Pour any of the remaining juice over the drained rice noodles.
