Spaghetti Bolognaise

You’ll love it because… even though this bolognaise sauce takes one hour to cook, it’s worth it. Just ask any Italian mama!

Serves 4


Ingredients:
  • 500g spaghetti
  • 450g lean beef mince
  • 1 large onion, finely chopped
  • 2 stalks celery, finely chopped
  • 2 carrots, finely chopped
  • 3ml dried origanum
  • 20ml olive oil
  • 150ml dry white wine (optional) or 150ml beef stock
  • 100ml tomato paste
Method:
  1. Fry onion, celery and carrot over a medium heat for 6-8 mins, stirring occasionally.
  2. Add mince and origanum, and cook for about 5 mins (until mince has changed colour but isn’t browned yet).
  3. Add white wine (or beef stock), tomato paste and season with salt and pepper.  Reduce heat, cover with a lid and allow to simmer very slowly for 1 hour.
  4. Once the bolognaise sauce is cooked, boil and drain the pasta.
  5. Toss sauce and pasta together and serve with grated cheese.
