Pasta with basic Tomato Sauce

Ingredients:
  • 500g penne pasta or pasta of your choice

Tomato Sauce:
  • 2 x 400g cans whole tomatoes, chopped
  • 1 onion, finely chopped
  • Pinch dried chillies
  • 1 clove garlic, crushed
  • Salt & black pepper
  •  Pinch sugar
  • 125ml white wine (optional)
  • Handful fresh basil leaves (optional)
  • Oil
Method:
  1. Fry onion and garlic in oil and cook until onion is softened.
  2. Add tomatoes and season with salt and pepper.
  3. Add chillies and sugar.
  4. Pour in wine (optional) and simmer until sauce has thickened slightly (about 20 minutes).
  5. Cook pasta as per packet instructions, drain and add to sauce to coat.
  6. Sprinkle with basil leaves before serving.
