30-day Muffin Mixture
Method: Cream the eggs and sugar together, add the oil and beat well. Add all the ingredients, raisins and vanilla, alternating with the milk. Leave in the fridge overnight before baking. Stir well before spooning into muffin pans. Bake at 180ºC for 15-20 minutes. Remove and cool.
Toasted Bacon & Tomato Muffin with Coriander Chutney
Method: Fry bacon until cooked. Add cherry tomatoes to pan and fry until skins burst. Set aside on a plate. Toast muffins and place on a plate. Spread with a generous amount of chutney, top with bacon and tomatoes, season with salt and pepper, and serve hot.
