Shrimp roll

This is the perfect meal for a lazy Saturday afternoon at home with the kids.

¼ cup mayonnaise
1 tbsp lemon juice
Salt and pepper
250g shrimp – buy frozen and defrost overnight in the fridge before using
2 radishes, chopped
6 hot dog rolls
1 small bag of ready chopped coleslaw mix
¼ cup sliced chives (optional)
1 bag potato chips (optional)

1. In a medium bowl, whisk the mayonnaise, lemon juice, half a teaspoon of salt and a quarter teaspoon pepper.
2. Fold in the shrimp, radish and coleslaw mix.
3. Fill the rolls with the shrimp mixture. Serve with the potato chips.
