Layered vegetable bake

This tasty and healthy vegetable dish makes a great side to any dish, but it will also be a tasty meal on its own.

Olive oil
3 medium zucchinis, sliced lengthwise
3 eggplants, peeled and sliced lengthwise or into rounds
1 butternut, sliced into rounds
Handful of mushrooms, sliced
1 red onion, sliced
Salt and freshly ground pepper
6 plum tomatoes, diced
¾ cup crumbled feta cheese
¼ cup basil leaves, chopped Method:

Preheat the oven to 200ºC.
2. Arrange the vegetable slices in an oiled casserole dish, slightly overlapping. Continue to layer all the vegetables. Bake for 15 minutes, until tender.
3. Add the diced tomatoes and the juice. Season with salt and pepper.
4. Scatter with
the feta and basil. Bake for about 50 minutes until bubbling and crisp (check veggies now and then).
