Easy Italian tomato pasta

This dish could not be easier, and it's delicious!


Olive oil
1 onion, finely chopped
4 garlic cloves, minced
125ml vegetable stock
1 tsp sugar
2 cans of chopped tomatoes
Salt and pepper to taste
500g pasta of your choice
Cherry tomatoes, basil and Parmesan cheese (optional)

1. Fry onion in a saucepan until soft, add the garlic and fry for a few more minutes.
2. Pour in the stock, tinned tomatoes, sugar and seasoning.  Simmer until the liquid has reduced and the sauce has thickened.
3. Serve over your favorite pasta with basil leaves, grated Parmesan cheese and some chopped cherry tomatoes.
