Tuna, spinach and tomato tart
Simple and full of flavour!
1 packet ready rolled puff pastry
2tbsp wholegrain mustard
50g grated cheese
400g mixed cherry tomatoes
2 tins of tuna
1 cup cream cheese
2 handfuls of basil leaves
1. Preheat oven to 180ºC.
2. Unroll the pastry onto a non-stick baking tray and score a line three centimetres from the edge all around. Spread the centre of the pastry with the mustard and sprinkle with half the cheese.
3. Cut the tomatoes in half and scatter over the top of the pastry.
4. Combine the tuna, cream cheese and egg in a bowl and season well. Spread the mixture over the pastry. Sprinkle with the remaining cheese.
5. Bake the tart in the oven for 15-20 minutes or until golden brown. Sprinkle with basil leaves and serve.
