Pesto chicken pasta with mushrooms
A quick and easy pasta dish to add to your collection.
4 chicken breasts, sliced into strips
1 punnet of mushrooms, sliced
3 tbsp pesto
3 tbsp of sundried tomatoes shredded
500g Penne or any pasta of your choice
20ml olive oil
Salt and pepper
1. Boil the pasta according to the instructions.
2. In a pan heat the olive oil and lightly fry the mushrooms for about eight minutes until soft.
3. Remove from the pan and add the chicken strips. Fry on a medium heat until cooked through.
4. Once the pasta is cooked, drain and return it to the pot. Add the chicken and mushrooms along with the pesto and sundried tomatoes. Season with salt and pepper and serve hot.
