Baked egg with ham and tomato


1 garlic clove, chopped
Olive oil
400g tin chopped tomatoes
1-2 tsp dry basil
6 sliced cooked ham, roughly torn
6 eggs
Bread to serve

1. Heat the oven to 180ºC.
2. Heat a little oil in a pan, sizzle the garlic for a few seconds then add the tomatoes and simmer for 10 minutes until thickened.
3. Stir in the basil. Divide the sauce and ham between individual dishes or use one large baking dish. Crack egg on top and season.
4. Bake for 12-14 minutes or until egg is cooked to your liking. Serve with thick slices of buttered bread.
