Vetkoek with savoury mince

This traditional South African dish is so tasty and the basic savoury mince recipe can be used for lots of different dishes so save it for your recipe book.


2 cups flour
2 tsp baking powder
1 tbsp sugar
½ tsp salt
1 cup milk
2 eggs
Enough oil for deep-frying

1. Sift together flour, baking powder and salt.
2. Whisk egg, milk and sugar.
3. Make a well in the dry ingredients, add milk and egg mixture and mix to very soft dough. Add more milk if necessary.
4. Heat the oil to between 180 °C and 190°C.
5. Ladle level spoonfuls of batter into the hot oil (about 12 cm deep) and bake until brown on both sides, before removing from oil. Use towel paper to absorb the excess oil.
6. Serve with savoury mince.

Easy savoury mince
Fry an onion and two cloves of garlic in some olive oil. Add 500g mince and cook until browned. Remember to stir the mince to break it up. Then add one large carrot, peeled and finely chopped. Cook for a few minutes. Finally add one can of tomato paste and one packet of powdered savoury mince mix. Add stock or water as necessary. Season with salt and pepper.
