Chicken cacciatore

Another easy, budget recipe to add to your meal plan.

1 tbsp olive oil
6 boneless chicken breasts, sliced
1 large onion, chopped
1 clove garlic, crushed
1 large green pepper, cut into chunks
1 tsp dried oregano
2 cans diced tomatoes

1. In a large saucepan, heat oil, add chicken and brown on both sides (about two minutes per side), remove and set aside.
2. In the same saucepan, sauté onions for about five minutes until transparent.
3. Add garlic, green pepper and oregano and cook for two to three minutes.
4. Add the tomatoes and chicken to the saucepan and bring to the boil, reduce heat to medium-low and cook for 15 minutes. Serve over rice.
