Perfect mashed potatoes

There are many ways to make mashed potatoes but the basic principles are the same.
1. Before you boil the potatoes cut them into similarly-sized pieces so that they cook evenly.
2. Use some elbow grease to get out all the lumps.
Tip: Every now and then you get stubborn potatoes that just don't seem to want to mash properly. If you've been mashing for a while and you just can't get it completely smooth, haul out your trusty electric beater and put it to work!

Classic mash
Boil 1kg peeled potatoes in a pot with salted water until soft and then drain and mash. Add 125ml milk and 40g butter (or more) until you reach your desired consistency. Add salt and black pepper to taste.

These simple ingredients can be added to the classic mashed potato recipe to make delicious variations:

Garlic mash
Heat the butter and a peeled clove of garlic in a frying pan and add to the mash with the milk/cream.

Mustard mash
Add 30ml of wholegrain mustard.

Parmesan mash
Add grated Parmesan cheese to your mashed potato.

Vegetable mash
Add butternut, peas or sweet potato as a great veggie-friendly option for kids.
