Mushroom stroganoff

A quick and easy meat-free dish the family will love.

2 tbsp butter
1 large onion, chopped
4 cups mushrooms, sliced
2 tbsp flour
1½ cup beef stock
½ cup parsley
1 cup sour cream

1. Melt butter in a pan and add the onion until softened.
2. Add the mushrooms and cook for about seven minutes, until mushrooms are browned.
3. Sprinkle with flour. Gradually add the beef stock, stirring continuously.
4. Add the parsley and stir through.
5. Add the sour cream and stir until well combined
6. Season well with salt and pepper and serve hot over rice or pap.
