Cauliflower, bacon and feta omelette


Whether it's breakfast, brunch, lunch or supper, give this no-fuss dish a try.

Ingredients:
6 eggs
2 cups of cauliflower
1 packet of bacon
1 round of feta
Salt and pepper

Method:

In a pan lightly fry the bacon.
2. Grate the cauliflower and add to the bacon. Fry for about six minutes or more if you prefer your bacon crispy.
3. Lightly beat the eggs in a bowl and then add to the pan. Sprinkle feta cheese into the egg mixture and season with salt and pepper.
4. Allow the bottom of the egg mixture to set and cook along the sides of the pan. Gently fold it over with a spatula and press down lightly. Place it under the grill for three minutes.
