Home-made salad dressing

Impress your family and friends with your very own home-made salad dressing – give it a try this weekend!

This classic French vinaigrette makes enough for one large salad.

1 tbsp white wine or red wine vinegar (whichever you prefer)
A pinch of castor sugar
4 tbsp extra virgin olive oil
½ tsp Dijon mustard
1 small clove garlic, crushed
Salt & pepper

1. Place vinegar in a screw-topped jar, add sugar and a good pinch of salt. Twist jar closed and shake until sugar has dissolved.
2. Add oil to the jar with the mustard and garlic and shake again until you have thick dressing.
3. Season to taste and refrigerate until needed.

Mustard vinaigrette:
Recipe as above, but increase Dijon mustard to one teaspoon, then add one teaspoon wholegrain mustard and a small bundle of chives, snipped.

Balsamic & honey dressing:
Recipe as above, but replace white/red wine vinegar with balsamic vinegar, and the sugar with half a teaspoon of honey. Leave out the Dijon mustard.
