Spaghetti with tomato and mushroom sauce


Cheap, quick and tasty – yes please!


Ingredients:

500g spaghetti
2 medium onions, diced
1 large pack assorted mushrooms, chopped
2 cans crushed tomatoes
1 cup basil leaves, thinly sliced
3 garlic cloves, minced
Mixed herbs
Cherry tomatoes, chopped (optional)

Method:
1.
Cook the spaghetti according to packet instructions.
2.
Heat some olive oil in a saucepan over medium heat. Add the onions, half a teaspoon of salt and a quarter teaspoon of black pepper and cook until the onions soften.
3.
Add three minced garlic cloves and the mushrooms and cook, covered, for six minutes.
4.
Stir in some more salt, black pepper and mixed herbs to taste and cook for a further four minutes.
5.
Add the tomatoes and heat through, then stir in the basil leaves.
6.
Transfer the pasta to plates and spoon over the sauce.
