Pita breads are great for the lunchbox or an afternoon snack and they are so easy to take along on a picnic. Make your fillings beforehand – we used chicken and tzaziki but you could make just about anything to go with these delicious breads.
Make your own tzatziki:
1¼ cups Greek yoghurt
½ cucumber, finely chopped (about one cup)
2-3 tbsp chopped chives
1 clove garlic, crushed
1 tbsp lemon juice
Salt and freshly ground pepper, to taste
Using a fine strainer over a bowl, strain the yoghurt overnight in the fridge. When strained, mix the thick yoghurt with the remaining dip ingredients and chill.
You can also try a steak pita or falafel pita.
