Crunchy rice salad


A tasty and fresh side dish for your next braai.

Ingredients:

175g basmati and wild rice
50g raisins
6 tbsp olive oil
3 tbsp fresh coriander, chopped
1 red chilli, deseeded and chopped
Zest and juice of one lime
6 spring onions, sliced
1 green pepper, deseeded and chopped
4 celery sticks, chopped
1 red apple, cored and chopped, skin on
Salt and pepper

Method:
1.
Cook the rice according to the packet instructions.
2. Add raisins to the water and cook for two minutes, drain and run cold water over rice to cool. Drain very well.
3. Whisk together the lime zest and juice, coriander and olive oil, then season with salt and pepper.
4. Put the rice into a bowl and stir in the dressing followed by the chilli, spring onions, green pepper, celery and apple.
