Grilled mushrooms


This meat-free meal is delicious with a fresh green salad and is your answer to a healthy, budget meal.

Ingredients:
6 large mushrooms
6 slices of goat's cheese
2 cloves garlic
Sprinkling of breadcrumbs
Olive oil
Salt and pepper

Method:
1. Heat oven to 200ºC. Wipe the mushrooms with kitchen paper and place on a baking tray. Season, then scatter with the garlic and place a slice of goat's cheese in the middle.
2. Drizzle over some olive oil, cover with foil, then cook in the oven for 10 minutes. After five minutes, remove from the foil and return to the oven.
3. When the mushrooms are tender and the cheese melted and bubbling, sprinkle some breadcrumbs over the top. Return to the oven until golden – about two minutes.
