Fish tacos

This simple and fresh fish dish makes a great family meal but is also perfect for casual entertaining.


Any firm white fish of your choice (boxed fish fillets work perfectly)
Lettuce, cucumber, tomato
Taco shells
Handful fresh parsley
1 lemon
Low-fat cottage cheese or mayonnaise

1. Cook the fish fillets according to the instructions on the box and the flake with a fork and set aside.
2. Warm the taco shells in the oven and cut up the salad ingredients. Then fill the taco shells half way with the salad.
3. Add the flaked fish and a tablespoon of low-fat cottage cheese or mayonnaise to each taco.
4. Finish off with a sprinkle of fresh parsley and a squeeze of lemon.
