Avo, tomato, feta pasta salad
Pasta salads are great because they make a lot and will fill you up, but you still get a refreshing summer meal. Here's one we love:
500g fusilli pasta
2 cups mixed tomatoes sliced up
2 rounds of feta diced up
1 avo, chopped
Cooked green beans (optional)
For the dressing:
½ cup mayonnaise
1 tsp Dijon mustard
1-2 garlic cloves, grated
2½ tsp freshly squeezed lemon juice
3 tbsp water
Salt and pepper
1. Cook the fusilli pasta according to the packet instructions. Drizzle with a small amount of olive oil and allow the pasta to cool down before mixing the salad.
2. Cut the tomatoes, green beans, feta and avo and add to pasta. Adjust the ingredients to your liking.
3. Combine all the ingredients for the salad dressing, whisk together and pour over the salad.
