Stuffed chicken breasts


250g bread crumbs
2 large onions, chopped
400g mushrooms, sliced
½ tsp dried thyme
1 garlic clove, minced
1 cup mozzarella cheese
Salt and pepper to season
6 skinless, boneless chicken breasts
2 tbsp olive oil

1. Preheat oven to 180°C.
2. Add onions and mushrooms to a frying pan and sauté for 10 minutes. Stir in thyme and garlic and season with salt and pepper.
3. Cut a slit through the thickest portion of each breast half to form a pocket. Stuff each breast with two tablespoons of the onion and mushroom mixture.
4. Place the chicken breasts on an oven proof dish and sprinkle the tops with the mozzarella cheese. Then sprinkle with the bread crumbs and drizzle olive oil over the top.
5. Bake in the oven for 40 minutes until golden brown and cooked through.
