Lemon and herb baked fish


Before the weather starts to cool down too much, there's still time to enjoy a delicious summer meal like lemon and herb baked fish. It's healthy, easy to prepare and will pair perfectly with this green bean, bacon and potato salad.


Ingredients:

6 fish fillets, we used hake
1 lemon and the juice of another
200g bread crumbs mixed with lemon rind salt, pepper and chilli
Thyme

Method:
1. Preheat oven to 200ºC.
2. Rinse fish and pat dry.
3. Place fish on a baking try and drizzle with lemon juice.
4. Sprinkle a good layer of breadcrumbs over the fillets and finish of with more lemon juice.
5. Bake for 10-15 minutes and serve immediately.
