Spicy bean and sausage casserole


This tasty one-pot meal is a good one to add to your meal plan. Let your kids try this version, but you can leave out the chilli in future if it's too spicy for them.

Ingredients:
1 tbsp oil
8 pork sausages or any other sausage of your choice
3 carrots, halved and sliced
2 onions, chopped
½ tsp chilli powder
2 chillis chopped (more if you like it hotter)
½ tsp Worcestershire sauce
2 tbsp red wine vinegar
450ml chicken stock
2 x 410g cans mixed beans, rinsed and drained
150g frozen peas
Salt and pepper to taste

Method:
1. Heat the oil in a large pan. Fry the sausages for six minutes, turning until brown on all sides. Remove and set aside.
2. Add carrots and onions to the pan and cook for eight minutes until the onions are soft.
3. Add the vinegar, Worcestershire sauce and spices to the pan, and then stir in the drained beans.
4. Pour over the stock, add the sausages to the beans and simmer gently for 10 minutes.
5. Scatter in the frozen peas and cook for two minutes until heated through. Serve straight from the pan.
