30-day muffin mixture
Make this
batter once and freeze it. Then defrost and bake as many muffins as you want
and freeze again.
Ingredients:
4 eggs
600g soft brown sugar
190ml sunflower oil
4 cups All Bran Flakes
1 litre milk
600g cake flour
5 tsp bicarbonate of soda
5ml salt
250g seedless raisins
5ml vanilla essence

Method:
1. Cream the eggs and sugar together, add the oil and beat well.
2. Add all the ingredients, raisins and vanilla, alternating with the milk.
3. Leave in the fridge overnight before baking.
4. Stir well before spooning into muffin pans.
5. Bake at 180ºC for 15-20 minutes.
6. Remove and cool.
