Potato and bean curry


It's meat-free Monday, so try this super easy veggie curry.

Ingredients:
1 onion, chopped
4 cloves garlic, minced
1 tsp ground cumin
2 tsp curry powder
3 cups vegetable stock
6 medium potatoes, cut in bite-size pieces
1 can of mixed beans
1 cup green beans (fresh or tinned)
1 small handful of spring onions, thinly sliced
Fresh ground black pepper to taste

Method:

1. Boil potatoes until tender.
2. In a large saucepan heat the onion, garlic, spices and then add the potatoes to the beans, spring onions and stock.
3. Cook 10 minutes or until the beans are tender.
