Easy veggie pizza

It's Friday! And we feel like treating ourselves to something tasty this weekend. The ladies here at Club are constantly trying to be healthier and we've done pretty well so far. That doesn't mean, however, that we don't like a good burger or pizza every now and then. If you've been cutting down on the junk food and don't want to cheat too much, then give this easy veggie pizza a try.

6 medium-sized pizza bases
Grated cheddar or mozzarella cheese*
Choose three of your favourite veggies and don’t forget about the leftovers in the fridge!

Here are a couple of combinations to try:
• Olives, green peppers and cherry tomatoes
• Red onion, baby marrows and yellow pepper
• Spinach leaves, feta and mushrooms

* Mozzarella is the healthier option, but it isn't quite as tasty as cheddar, so why not use a combination? Mostly mozzarella with a sprinkling of cheddar for flavour.
